Coconut Loaf
1 ¼ cup flour (wholemeal, white or half and half)
1 ½ cups desiccated coconut
1 ½ teas. baking powder
1 ½ cups soya milk
1 cup raw sugar
Preheat oven to 180 degrees C and grease one loaf tin.
Soak coconut in soya milk for ½ hour. ( Can leave this step out but gives extra flavor)
Mix all ingredients in a bowl.
Pour into loaf tin.
Bake approx 40 mins.
Comments – Delicious and super easy to make. |

1 cup white flour 1 1/4 cups wholemeal flour 1 tbs. baking powder 3/4 teas. baking soda 2 teas. cinnamon 1 1/2 teas. nutmeg 130 g margarine 1/2 cup brown sugar 250 grams parsnips, coarsely grated 1 medium banana, mashed grated rind and juice of 1 orange

3 cups flour 2 teas. ground ginger 3 teas. baking powder 1 teas. baking soda 175 grams margarine 300 mls dark sugar (tightly packed) 150 mls treacle 150 mls golden syrup a few handfuls glaced ginger roughly chopped 300 mls (more or less) soyamilk, enough to make a fairly thick batter
Preheat oven to 180 deg Sift the flour, ginger, baking powder, and soda into a bowl. Add the ginger pieces.
Melt the butter or margarine, sugar, treacle, and syrup in a pot, stirring till smooth (all the sugar must melt).

1 cup flour 2 cups bran flakes 1 teas. baking powder 1 tbs. sugar 1 cup chopped dates 1 teas. soda 1 1/2 cups soya milk 2 tbs. golden syrup
Heat soyamilk and golden syrup. Add to dry ingredients. Mix lightly until combined.
Put into 2 greased and floured loaf tins.
Bake 180 45 mins until done |

225 g margarine 175 sugar 1 dessertspoon golden syrup 1 dessertspoon soya milk 1 teas. baking soda 1 cup flour
Cream margarine and sugar.
Heat soyamilk and syrup. Add soda and stir. Add to creamed mixture
Add flour and mix lightly.
Roll into small balls and flatten with a fork. Allow room for spreading.
Bake 180 deg 15-20 mins
Comments - You guessed it! Another of my Mum's recipes :) This is a good one to use wholemeal and other flours with the white flour.

1/2 cup sugar 50-75 grams margarine 1 cup flour 1/2 teas. baking soda 1 teas. cream of tartar 1/2 teas. cinnamon 1/2 cup currants
Cream margarine and sugar.
Add sifted dry ingredients and currants.
Gradually add soyamilk and stir lightly until combined. Mixture should be moist and holding together but not too sticky.
Roll on lightly floured surface. Cut into shapes with biscuit cutter.
Bake 180 approximately 10 minutes

Makes 12 muffins 1 cup pitted semi-dried dates – chopped ½ cup maple syrup or honey 1 teaspoon bicarb soda Grated rind and juice of 2 oranges 3 green apples, peeled and grated 3 cups wholemeal self-raising flour 1 teaspoon cinnamon 1 cup sultanas ½ cup walnuts chopped Preheat oven to 180C/350F Combine the dates, maple syrup, bicarb soda and 1 cup water in saucepan. 1 cup soya milk or water 2 tbs. golden syrup 1 c flour 1 cup bran flakes 1 teas. baking powder 1 teaspoon baking soda 1 cup sugar sesame seeds
Preheat oven to 180 C and grease muffin tins. Heat milk and syrup together. Mix dry ingredients together Add wet ingredients and stir until just blended. Mixture will be abit runny. Spoon mixutre into muffin trays and sprinkle with sesame seeds. Bake 20 mins.
